You know by now that Nick doesn't really do sweets.
But he loves just a few things: Riesens candy, the sugar cookies and
chocolate-peanut butter-oatmeal drop cookies.
Carol and Courtney sent me this recipe for the cookies, and it's a keeper.
We have a few other recipes we've tried, and sometimes they're too dry or too runny or too chewy. This one turned out great on his birthday.
1/2 cup butter
1/2 cup milk
2 cups sugar
1/3 cup cocoa
dash salt
1/2 cup peanut butter
1/2 t. vanilla
2 1/2 cups oats
Mix together butter, milk, sugar, cocoa & salt on stove. Bring to a boil.
Take off stove & add peanut butter, vanilla & oats.
Let the mixture sit and cool for just a few minutes before dropping on wax paper (to avoid spreading).
Allow cookies to cool at room temperature to set.
